I wonder if my respect for due process is because in software development, if you go cowboy without any sort of process things will tend to break down and descend into chaos. I’ve been in crazy projects with a lot of problems but I’ve never wanted to skip process like testing, verification, triage, etc. Imagine if your project lead was like this crazy cowboy where he’s all “fix lang tayo ng fix, wag na tayo magverify, we only have 3-6 months, my god i hate bugs!”, tapos pag umalma yung testing lead sasabihan sya ng “wag ka magulo, sasabihan ko yung devs na wag ka respetuhin”

Agree. Sa CMMI Level 1 companies you get "heroes". Because of the lack of processes, the whole project depends on a few exceptional people. Things work well, until they get tired. It is not sustainable, and the organization does not mature.
Your respect for due process comes from the fact that you're a decent human being. I know that because the non-observance of due process is not a legal or technical wrong, it's a moral wrong, and we were taught as kids by our parents and schools that "wag ka magbibintang, wag ka mangduduro."
in a general sense i agree with the sentiment of your analogy. in a specific sense, your analogy suffers from the possibility that the due process that is acceptable to you might not be the due process that is provided for. ;)
Uso na devops ngayon. Some companies can get away with not having separate timeline and team for manual tests. Ay sorry, due process pala usapan. Hihi
